This cake originated in Hawaii and is quite popular there.  If you love mochi, then this cake is for you.  You can also make a Corn Butter Mochi Cake.  This is easy to make.  Requires no special tools or equipment. Chef’s Notes: This cake does not brown well so if you want a browned top, put the oven on the broiler setting (heat on top) after the cake is done and bake additional 5 – 8 minutes at 400F.  Watch the oven because  it can burn very quickly.  Another option to brown this is to put it in the oven toaster. Browning in this case does not contribute to the flavor, it only makes the cake look prettier.
