Ayako Tatehori started iipan by herself in a renovated warehouse at home in September 2007, and moved to the current location in 2012. She bakes bread daily while raising her children.
The name "iipan" is derived from the owner's own family name, in addition to the desire to make "good bread, and a wish to connect "i" and "i" (people) with various people through bread.
