Fermentation Générale in Paris
This is a store specializing in fermented products such as sourdough bread, sourdough focaccia, natural wine,  kimchi, and fermented vegetables (Lacto- fermentation).
The owner, Valentin, used to be a sommelier. He became interested in fermentation through natural wine and also trained as a baker.
He sticks to all ingredients like water, salt, and wheat thoroughly and kneads the dough one by one by hand, and fermentates dough naturally.
Their focaccia is delectably superb.

the type of natural leaven:
1. Sourdough (the yeast doesn’t contain in any bread at all / pain au levain naturel)
