Pacha, a delectable and hearty soup, epitomizes the rich culinary heritage of Afghanistan. This savory dish, crafted with cow or sheep's feet as its centerpiece, stands as a testament to the Afghan people's resourcefulness and their ability to transform humble ingredients into culinary masterpieces.

Flavorful Journey to Afghanistan:
Pacha's origins can be traced back to the nomadic tribes of Afghanistan, who utilized every part of the animal to sustain themselves amidst harsh landscapes. The feet, often overlooked in other cuisines, became the foundation for a nourishing and comforting soup that has warmed the hearts and stomachs of Afghans for generations.

A Culinary Symphony of Textures and Flavors:
The preparation of pacha is a labor of love, requiring patience and meticulous attention to detail. The feet are meticulously cleaned and simmered for hours in a fragrant broth infused with an array of spices, including turmeric, black pepper, and salt. This slow-cooking process transforms the feet into tender morsels that readily release their rich collagen, lending the soup a velvety texture and a depth of flavor that is truly extraordinary.

A Culinary Tradition Rooted in Community:

1/2 teaspoon turmeric
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 cup cooked chickpeas

Instructions:
Wash the cow or sheep's feet well and cover them with cold water.
In a large pot, cover the cow or sheep's feet with cold water and bring to a boil.

While the feet are simmering, sauté the onion, garlic, and ginger in a separate pot with a little oil until softened.

Drain the feet and transfer them to the pot with the sautéed vegetables.
Stir in the cooked chickpeas, beef broth, and chopped wheat.
