Gülpi is originated in the eastern part of Afghanistan mainly in Laghman province, where cauliflower is a popular vegetable. The dish is said to have been inspired by Indian curries, but it has a unique Afghan twist. Gulpea is often made during the summer months, when tomatoes are in season.

Gülpi (also spelled Gulpe or Gholpi) is a popular Afghan vegetarian dish made with cauliflower, tomatoes, and spices.
Gobi Keema, also known as Gulpy is a popular Afghan dish made with minced meat and cauliflower. It is a flavorful and hearty dish that is perfect for a winter meal.

Ingredients:
1 pound ground beef or lamb
1 head of cauliflower, florets cut into bite-sized pieces
2 onions, chopped
2 tomatoes, chopped
2 cloves of garlic, minced
1 tablespoon ginger, grated
1 teaspoon garam masala
1/2 teaspoon turmeric
1/4 teaspoon red chili powder
1/4 teaspoon black pepper
1/4 teaspoon salt
1/4 cup cilantro, chopped
Vegetable oil for frying

Instructions:
In a large skillet, heat the vegetable oil over medium heat. Add the onions and cook until softened, about 5 minutes.
Add the garlic and ginger and cook for 1 minute more, until fragrant.
Add the ground beef or lamb and cook until browned, breaking it up with a spoon.
Add the cauliflower florets, tomatoes, garam masala, turmeric, red chili powder, black pepper, and salt.
Bring to a simmer and cover. Cook for 15-20 minutes, or until the cauliflower is tender.
Stir in the cilantro and serve hot with naan or rice.

Tips:
For a spicier dish, add more red chili powder to taste.
You can also add other vegetables to this dish, such as carrots or peas.
If you don't have garam masala, you can substitute 1/2 teaspoon of cumin, 1/4 teaspoon of coriander, and 1/8 teaspoon of cardamom.
If you don't have tomato paste, you can substitute 1/2 cup of canned crushed tomatoes.

Additional notes:
This dish is traditionally served with rice or naan bread.
It can be made ahead of time and reheated.
