Pakoras are a popular appetizer or snack made from vegetables dipped in a spiced chickpea flour batter and deep-fried until golden brown and crispy. They are versatile and can be made with a variety of vegetables, such as onions, potatoes, cauliflower, eggplant, and peppers. Pakoras are typically served with chutney or yogurt for dipping.

Ingredients:

1 cup chickpea flour (chickpea flour )
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon garam masala powder
1/2 teaspoon red chili powder (adjust to taste)
1/2 teaspoon salt
1/2 teaspoon ginger-garlic paste
1 tablespoon chopped cilantro
1 cup water
2 cups oil for deep frying
Assorted vegetables, thinly sliced (such as onions, potatoes, cauliflower, eggplant, and peppers)
Instructions:

In a large bowl, whisk together the chickpea flour, turmeric powder, cumin powder, coriander powder, garam masala powder, red chili powder, salt, ginger-garlic paste, and cilantro.
Gradually add water to the flour mixture, whisking constantly, until you have a thick batter that coats the back of a spoon.
Dip the vegetable slices into the batter, making sure they are well coated.
Heat the oil in a large pot over medium-high heat until it reaches 350°F (175°C).
Carefully lower the coated vegetables into the hot oil in batches.
Fry the pakoras for 3-4 minutes, or until they are golden brown and crispy.
Drain the pakoras on a paper towel-lined plate.
Serve immediately with chutney or yogurt for dipping.
Tips:

For a spicier batter, add more red chili powder to taste.
You can also add other spices to the batter, such as fenugreek seeds, ajwain seeds, or asafoetida.
To make sure the oil is hot enough for frying, drop a small cube of bread into the oil. If it sizzles and floats to the top, the oil is ready.
Don't overcrowd the pot when frying the pakoras.
Serve the pakoras hot and fresh for the best flavor and texture.
