Samosas are a delicious and unique variation of the classic Indian snack. They are typically made with a flaky pastry dough that is filled with a savory mixture of potatoes, peas, and spices. Samosas are also often deep-fried, which gives them a crispy exterior and a fluffy interior. Samosas are typically served with a green sauce chutney, which is a tangy and flavorful condiment made with cilantro, mint, green chilies, and vinegar. It is the perfect complement to the savory samosas.

Here are the ingredients: For the dough:
2 cups all-purpose flour
1 teaspoon carom seeds
1 teaspoon salt
2 tablespoons ghee or oil
1/4 cup water
For the filling:
5 medium potatoes, boiled and peeled
1/2 cup green peas, boiled
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon ginger-garlic paste
1/2 teaspoon red chili powder
1/2 teaspoon garam masala powder
1/2 teaspoon turmeric powder
1/4 teaspoon coriander powder
Salt to taste
Cilantro leaves, chopped
Oil for frying

Instructions:
To make the dough, combine the flour, carom seeds, and salt in a large bowl. Add the ghee or oil and mix until well combined. Gradually add the water and knead until a soft dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.
While the dough is resting, make the filling. In a large bowl, combine the potatoes, green peas, cumin seeds, coriander seeds, ginger-garlic paste, red chili powder, garam masala powder, turmeric powder, coriander powder, and salt. Mix well.
To assemble the samosas, divide the dough into equal-sized balls. Roll out each ball into a thin circle. Cut the circle in half. Place a spoonful of the filling in the center of each half. Fold the pastry over the filling to form a triangle. Seal the edges of the triangle with water.
Heat the oil in a deep frying pan over medium heat. Fry the samosas in batches until golden brown and crispy. Drain the samosas on paper towels and serve hot with your favorite chutney or sauce.
