Sabzi palak is a popular Afghan dish made with spinach and leeks. It is a healthy and flavorful dish that is perfect for a light meal or a side dish, squally served with rice if served as side dish. Sabzi Palak can also be served with Potatoes and green peas and sometimes with meat.
Here is a recipe for Sabzi Palak:

Ingredients:
1 pound spinach, washed and chopped
1 leek, white and light green parts only, thinly sliced
1/2 cup plain yogurt
1/4 cup heavy cream
2 tablespoons vegetable oil
1 tablespoon grated onion
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/4 teaspoon salt
1/4 teaspoon black pepper

Instructions:
Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
Add the spinach, leek, cumin, turmeric, salt, and pepper. Cook, stirring occasionally, until the spinach is wilted, about 10 minutes.
Stir in the yogurt and cream. Reduce heat to low and simmer for 10 minutes, or until the sauce has thickened.
Serve hot with naan or rice.
Tips:

For a richer flavor, you can use sour cream instead of plain yogurt.
You can also add other vegetables to this dish, such as diced tomatoes or carrots.
If you don't have heavy cream, you can use whole milk instead.
If you want a spicier dish, you can add a pinch of cayenne pepper.

Additional notes:
Sabzi palak is a versatile dish that can be served hot or cold. It is also a good source of vitamins and minerals, including vitamin A, vitamin C, and iron.
If you are looking for a vegan option, you can omit the yogurt and cream. You can also use vegetable broth instead of water.
Sabzi palak is a popular dish in Afghanistan, but it is also enjoyed in other parts of the world, such as Pakistan and India.
I hope you enjoy this recipe!
