☛This is a wonderful red bean paste mooncake with tangerine, very popular this year, and most importantly, this is super yummy. I made this tested recipe, it came out great and tempting!  This recipe used a 100g mooncake mould, can make either 10 mooncakes each 90g as in this video, or 9 mooncakes each 100g (a little higher than you see from the video), full recipe below.

材料份量 10個90g月餅 (@皮25g,餡68g)
Ingredients : 10 mooncakes, 90g each (@25g skin, 68g filling)

做月餅流程:
0. 若自己做轉化糖漿最好做月餅3個月前煮好。

1. 根據自己模具大小,決定製作多少月餅,計算出月餅總重量
2. 決定皮餡比例,一般皮:餡是 2.5 : 7.5 至 3 : 7,皮厚一些容易操作,新手可試 3 : 7 (100g模 : 30皮,70餡),熟手用 2 : 8 (20皮,80餡),皮薄一些也是廣式月餅特色之一。
3. 根據比例,計算出月餅皮和餡各自總重

6. 包月餅,焗月餅

📍 (A) 材料 :

(1) 餅皮材料 : 可做250g,10個月餅皮,每個25g
75g低筋粉,75g高筋粉,4.5g吉士粉,112g轉化糖漿 (或金獅糖漿),37g花生油,1/2茶匙陳村鹼水

(2) 陳皮豆沙餡料: 可做680g,10個月餅餡,每個68g
300g紅豆,約4公升熱水,3塊陳皮(果皮),80g花生油,80g砂糖, 10g紅糖,60g麥芽糖,1湯匙熟糯米粉(如需要)

(3) 月餅面材料:1 個雞蛋 ; 些少稀釋麥芽糖

(4) 準備1個100g月餅模具 ; 些少手粉(高筋粉)

(B) 烘焙溫度 : 各家爐溫不同,僅供參考
入預熱焗爐上下火230C(焗5分鐘)後,取出掃蛋液,
放回同樣焗溫(焗3分鐘)後調低至210C(焗6分鐘),
取出掃稀釋麥芽糖水及焗盤左右轉,
放回調高上火230C/下火210C(焗4分鐘)後,調低上火210C/下火180C(焗1.5分鐘),
關火,2分鐘後取出。

📍 (A) Ingredients :

(1) Skin : 250g, 25g each
75g low-gluten flour, 75g high-gluten flour, 4.5g custard powder, 112g invert syrup (or golden lion syrup), 37g peanut oil, 1/2 tsp Chencun lye water
inverted sugar recipe 轉化糖漿 (月餅糖漿) 💚 Easy Inverted Sugar Syr... (for self made inverted sugar, prepare 3 months in advance of making mooncakes)

(2) Filling : Red bean paste with tangerine 680g, 68g each
300g red bean, about 4 liters of water, 3 pieces of dried tangerine peel, 80g peanut oil, 80g granulated sugar, 10g brown sugar, 60g maltose, 1 tablespoon cooked glutinous rice flour (if needed)
cooked glutinous rice flour: stir fry glutinous rice flour on a pan for few minutes on low heat

(3) Topping brushing : 1 egg, some diluted maltose

(4) one 100g mooncake mould; little high gluten flour

(B) Baking temperature: oven varied, for reference only
Put in preheated oven, top/bottom heat 230C (5 min), take out for egg wash;
return to bake same temp (3 min), lower to 210C (6 min), take out for brushing diluted maltose water and return left/right swap, top 230C/bottom 210C (4 min), further lower to top 210C/bottom 180C (1.5 min), turn off and take out after 2 minutes.
