Today wer’re going to make sweet and nutty black sesame madeleines! The great combination of nutty black sesame madeleines and sweet white chocolate!

• Ingredients(Servings: 10 madeleines)
*** For the Black Sesame Madeleines
□ 78g Eggs, at room temp
□ 60g Granulated sugar
□ 10g Honey
□ 50g Cake flour
□ 20g Almond powder
□ 3g Baking powder
□ 15g Black sesame paste
□ 5g Black sesame powder
□ 55g Unsalted butter, melted
□ 15ml Milk, at room temp
□ Black sesame seeds, for sprinkle

*** For the Black Sesame Glaze
□ 82g White chocolate, for coating
□ 3~5g Black sesame paste

• Before you start
Take eggs and milk out of the fridge an hour before you begin baking
--------------------------------------------------------------------
• Instructions
1. Beat the eggs with sugar and honey until combined(Do not overmix)
2. Sift cake flour, almond powder and baking powder together and mix until well blended
3. Stir in black sesame paste and black sesame powder
4 Whisk in the melted butter and milk until smooth
5. Cover the batter with plastic wrap and refrigerate for 1 hour
(During the last few minutes of chilling, preheat oven to 375°F and butter the moulds)
6. Fill the moulds to 80-90% full and sprinkle some black sesame seeds on top
7. Bake for 10-12 min at 355°F
8. Let sit in the pan for 3 min and loosen the madeleines from the moulds
9. Transfer them to a wire rack to cool completely
10. Melt white chocolate in a double boiler(about125°F)
11. Stir in black sesame paste
12. Pipe the melted chocolate into the moulds and place the cooled madeleines in the moulds
13. Put in the freezer for 30 minutes to set
14. Gently loosen the madeleines from the moulds
15. Enjoy!
