Mugwort is a favorite ingredient of Korean food.
I made Madeleines with mugwort and it's so delicious that I will share this recipe with you guys ❤️

Ingredients(11 pieces)

Cake flour 80g
Mugwort powder 20g
Baking powder 4g
Sugar 80g
Starch syrup 20g (=Corn syrup)
Milk 20g
2 Eggs (100g)
Unsalted Butter 100g

※ Please use aluminum-free products for baking powder ※

Things to do before making batter~!
1. Melt butter
(Ideal temperature of melted butter : 40~50°C.
Melt it before making batter and let it cool down.)

Process
1. Sift Cake flour, Mugwort powder and baking powder.
2. Add sugar and mix gently with a whisk
3. Add eggs, starch syrup and milk and mix gently with a spetula
(★The point is to mix gently!★
If bubbles are created during this process, holes are made in the finished product)
4. Add the melted butter and mix well again.
(The proper temperature of melted butter is 40~50°C)
5. Please rest at least 1 hour to 24 hours in the refrigerator.
6. Grease a Madeleine pan
(Prepare the Madeleine pan by the end of the refrigeration.)
7. Mix the batter with a spatula
8. Fill the molds until 90% full and Bake 190°C - 4min  and 170°C - 6min in a preheated oven.
(Please adjust the temperature and time according to the oven.)
