Shropshire Fidget Pie is a traditional English dish from the county of Shropshire. It's a savory pie that combines pork, apples, and potatoes, often flavored with cider and onions.

The Shropshire Fidget Pie has a charming and unique history that reflects the agricultural heritage of Shropshire, a county in England. Its name, "Fidget Pie" (or sometimes "Fitchett Pie"), is as intriguing as its ingredients.

The Fidget pie has taken on various ingredient additions and variations over time. Now includes a cream sauce, cooked with gammon and ham. I wanted to cook this pie as near to an original as possible. The recipe included was taken from various sources with nearly identical ingredient references. The pie I have cooked today is as near to the original style of recipes I could find.

The pie originates from Shropshire, possibly dating back to the 17th century. It was a practical dish that combined readily available local ingredients, which made it a staple among the working-class families in the region.
The name 'Fidget Pie' is thought to have come from the word 'Fitchett,' meaning five or flat, possibly referring to the shape of the pie or the number of ingredients. Another theory suggests that it's a corruption of 'fitched,' a term for a side of bacon.
Shropshire, being an agricultural area, had an abundance of the ingredients used in the pie. Pork was a common meat, apples and onions were staple crops, and cider was frequently produced in the region.

Originally, the pie might have been simpler, focusing on pork and apples. Over time, potatoes and onions were added, and the recipe evolved to the version we know today. The use of cider in the recipe is a nod to the apple orchards prevalent in Shropshire.

Today, the Fidget Pie is a culinary delight and a symbol of Shropshire's history and traditions. It is often made for special occasions and is a source of local pride.

 For the pastry:
- 420 g All Purpose Flour
- 65ml Water
- 150g Shortening
- 50g Butter / Marg
- 1 medium egg
- 1 tsp Apple cider vinegar
- 1 tsp salt

- For the Filling:
- 500g pork tenderloin, sliced or diced, poached in cider
- 1 medium onion, finely chopped
- 2 medium potatoes, thinly sliced
- 2 tart apples, peeled, cored, and sliced
- 150ml dry cider
- 1 tbsp cornflour/cornstarch (probably the only ingredient not original)
- 1 tsp fresh sage, chopped (or ½ tsp dried sage)
- Salt and pepper, to taste
- 1 egg, beaten (for glazing)

Oven cook 180c 360f 35 mins
