Don't forget as with all recipes YOU have to taste along the way of cooking - all  recipes may need adjusting to your own tastes.  All recipes are full working recipes and as a base they are great - tailor to your own taste. Hope you enjoy cooking as much as i do.

Taking Cooking food back to basics.

Ingredients
650g Pork Mince
500g Pork Shoulder cubed small
½ tsp Thyme
1 Tsp sage
1 tsp Black pepper
1 ½ tsp salt
50g bread crumbs
1 egg to egg wash

Jelly
260 ml water
6g Gelatin powder
1 tbsp pork seasoning or chicken stock cube

Hot water pastry
600g All Purpose Flour
1 tsp salt
110g Butter
130g Shortening
200g water
Cooking

170 degrees will cook this pie but it has to be started uncovered then covered to stop burning then finish off uncovered. Now I would imagine that this pie will cook in about 40 mins. This was an experiment.
I would do the first 170c degrees  at 8 mins. That will get the top nice = cover the pie (video)
170c degrees  for 25 mins
170c degrees for about 7 mins - but have a look. Hot water crust pastry if very forgiving.
NOW DO NOT FORGET this was an experiment I have not cooked the pie.

Let cool add jelly
Cool in fridge
Divide pastry 2/3rds - 1/3 rd  - 2/3rds sides and bottom - 1/3rd top
7 inch x 3 inch cake tin
