This classic lemon tart recipe is easy to make, sweet and delicate. Made with crumbly and buttery pastry tart crust and filled with creamy and vibrant lemon curd. This recipe is super easy to make and perfect served with dollops of whipped cream, lemon zest or fresh berries. My tart shell recipe is the easiest, you can have it ready in few minutes.

💥 Lemon Tart Ingredients: Makes 9-10 Mini Tarts
Fro the Tart Crust
⅓ cup unsalted butter (75 g), softened
2 tbsp sugar
1 egg yolk , room temperature
1 tsp vanilla extract
1 cup all purpose flour (130 g)
For the Lemon Curd
4 eggs
2 yolks
½ cup unsalted butter (113g)
1 cup granulated sugar (200g)
2 tbsp lemon zest, zest of 2 lemons
½ cup lemon juice fresh (120ml)

💥 Lemon Tart Instructions:
1. In a bowl, add butter and sugar. Using a spatula, mix everything together. Add in egg yolk and vanilla extract. Continue mixing. Finally add in flour and bring everything together into a dough.
2. Cover with plastic wrap and chill in the fridge for 30 minutes.
3. Take a piece of dough and press it evenly into a 2.5 inch (6.5 cm) tart tin. Cut off excess dough with a knife. Using a fork, prick the base so that it doesn't puff up while baking. Place them on a baking tray and keep in the freezer for 10 minutes.
4. Bake in a preheated oven at 340ºF (170ºC) on the lowest rack for 17-20 minutes.
5. While baking tart shells, in a mixing bowl combine the eggs and yolks, whisk together and set aside.
6. Zest lemons and squeeze juice. Add the lemon zest, juice, butter and sugar to a medium sized pot and place over medium heat. Stir often until the butter is melted and the mixture just starts bubbling then remove from heat and slowly drizzle into the egg mixture while whisking. Pour back into the pot and place over low heat, whisking constantly until the mixture thickens and just starts to bubble.
7. Strain the lemon curd into a bowl. Pour the curd into the tart shells and smooth the surface then bake for 10 minutes or until the edge is just set. 8. Refrigerate for 2 hours. Add whipped cream, lemon zest or fresh berries before serving.
