This Apple Lemon Cake is
This Apple Lemon Cake is light and fluffy with creamy apple lemon curd, moist and tender crumb. This cake is easy to make, just follow the step by step simple instructions from start to finish.

💥 Apple Lemon Cake Ingredients:
Dough:
1/2 Cup Butter (113g), softened
1/2 Cup Powdered Sugar (60g)
1 Large Egg Yolk
1 1/4 Cups All Purpose Flour (180g)
1 teaspoon Baking Powder (4g)
Cream Filling:
1 Large Lemon (or 2 medium)
1 Large Apple (or 2 small)
1/2 Cup Sugar (100g)
2 Tablespoons Corn Starch (20g)
1 Tablespoon Lemon Zest
💥 Apple Lemon Cake Instructions:
1. In a mixing bowl, add butter, powdered sugar and mix until incorporated. Add in egg yolk and mix. Add flour and baking powder and mix until incorporated. Knead by hand for few minutes to form a soft dough. Cut 1/3 of the dough and cover with plastic wrap and keep in the freezer until needed.
2. Lightly grease the 7 inch cake pan (18cm) with butter and lined with parchment paper. Place the other 2/3 dough and spread evenly on the cake pan. Keep in the fridge for 30 minutes.
3. Preheat oven to 356F (180C).
4. Grate lemon and set aside. Peel the skin and remove the seeds. Peel the apple, remove the seeds and cut it into small pieces. Blend them in a food processor or blender to a fine puree.
5. In a sauce pan, add the puree, sugar, and corn starch. Cook on medium heat for 5-6 minutes or until cream mixture thickens.
6. Pour the cream mixture over a cold crust. Grate the frozen dough over the cream mixture evenly on top.
7. Bake for 35 to 40 minutes or until golden brown.
8. Cool completely. Add some lemon zest.
