Eggplant Mozzarella Rice Roll with
Eggplant Mozzarella Rice Roll with baked ham, cheese, Béchamel sauce in the oven! It's delicious both hot and cold. 😋

💥 Eggplant Rice Roll Ingredients:
2 Medium or Large Eggplants
3 Tablespoons Olive Oil
1 Garlic Clove
1 Teaspoon Oregano
Salt
1 Cup (200g) Cooked rice with turmeric - rice boiled in salted water with little turmeric
2 oz (70g) Turkey Ham or any ham of choice or canned tuna
2 oz (70g) Fresh Mozzarella Cheese
1 Cup Béchamel sauce (see below for measurement)
1 Tablespoon Parsley
1/2 Cup Marinara Sauce
3 Tablespoons Grated Parmesan Cheese
Homemade Béchamel sauce Ingredients
1/3 Cup (80 ml) Butter
1/3 Cup + 1 Tbsp (95g) All Purpose Flour
4 Cups (1 L) Milk
Salt and Pepper
Grated Nutmeg to taste
💥 Eggplant Rice Roll Instructions:
1. Preheat oven to 356F (185C).
2. Cut the eggplant into 1/8 inch lengthwise.
3. In a small bowl, add olive oil, crushed garlic, oregano and mix well. Place eggplants on a large baking sheet lined with parchment paper. Coat the eggplants with oil mixture and season with salt. Bake for 20 minutes.
4. In a mixing bowl, add cooked rice, chopped turkey ham, chopped mozzarella, Béchamel sauce, and chopped parsley. Mix well with spoon or spatula.
5. Take large spoonful of rice mixture and form a ball. Place a rice roll on one end of eggplant and roll it tight. (like making sushi rolls). Repeat.
6. Coat the bottom of 8 x 8 inch baking dish with marinara sauce, arrange the eggplant rolls. Add more marinara sauce, grated parmesan cheese, Béchamel sauce and drizzle with olive oil.
7. Bake in preheated oven at 356F (185C) for 15 minutes.
