Sourdough
60 g water
20 g sourdough starter, your best starter
60 g light rye flour
Main dough
120 g sourdough (or 25 g dried sourdough. Then use 40 g more water)
2 g fresh yeast or 0.6 g dried yeast
300 g light rye flour
200 g all-purpose flour
10 g salt
