I’ll teach you one way to cook Chicken Khao Poon, a traditional Lao coconut curry soup. THIS is my #1 favorite food of all time. If I could pick one dish to eat forever... this is it. I love how flavorful, rich, creamy and cozy it tastes. It’s perfect for fall and winter weather. And its also commonly served at parties in my family. In this video I chose to use chicken thigh and chicken feet as my protein. Stick around until the end to see how I cook the vermicelli noodle and prep garnish. This soup can be frozen for up to 6 months.

Noodle:
3-4 Pack Vermicelli Noodle

Garnish:
1/2 Small Green Cabbage
1/2 Small Purple Cabbage
1 Large Carrot
Handful Mint Leaves
3 Limes

Broth:
6 Quarts Water
8 Chicken Thighs
1.5 lb Chicken Feet
1 Large Bamboo Tip (If fresh, boiled in 1 Tsp salt)
2 Teaspoon Salt
2 Lemongrass Stalk
15 Kaffir Leaves
2 Inch Galangal
6 Thai Pepper
1 Shallot
2 Garlic Bulbs (1 bruised / 1 minced)
1 Tablespoon Vegetable Oil
2 Can Red Curry Paste
2 Can Coconut Milk
1 Can Coconut Cream
3 Tablespoon Chicken Bouillon Powder
1/4 Cup Fish Sauce
1/4 Cup Padaek
1 Tablespoon Oyster Sauce
1 Tablespoon Sugar
