Hello dear friends, today we learn how to make Kottayam style beef chaps. In this video I have demonstrated the simplest method to make Kottayam style beef chaps with very few ingredients. This recipe is very tasty and easy to make at home. This is my mother’s recipe for the spicy and extremely tasty Kottayam style  beef chaps. It goes very well with rice/ kappa puzhukku/ puttu/ chapathi/porotta. This video is dedicated to all the beef lovers out there. Ingredients
1. Beef – 2 kg
2. Ginger garlic paste – 1 tspn
3. Pepper powder – 1 tspn
4. Turmeric powder –  1tspn
5. Chilly powder – 2 – 2.5 tbsp (Adjust according to your spice tolerance. Use Kashmiri chilly powder to make it less spicy.)
6. Meat masala - 3 tspn
7. Green chilly – 4-6 nos, slit
8. Coconut milk - cup
9. Sliced onion - 1/2 kg
10. Cardamom -2 nos
11. Cinnamon stick - 1 piece
12. Red chillies- 4-5 nos
13. Coriander powder- 3tspn
14. Fennel seeds – 1 tsp
15. Mustard seeds – 1 tsp
16. Coconut oil – 1 cup
17. Salt – To taste
18. Curry leaves – 3 – 4sprigs

Method:-
1. Take a large bowl and add pepper powder,chilli powder,meat masala,salt and curry leaves. Then add beef and mix well. marinate for 30 mins.
2. Pressure cook the beef for 5 whistle. Strain the stock and slice into thin pieces.
3. Heat 1 cup of oil in a  deep pan at medium heat and splutter the mustard,fennel,red chillies,cardamom,cinnamon and finally add green chillies. Saute everything well.
4. Add sliced onions and saute till brown.
5. Add chilli powder, turmeric powder, coriander powder and meat masala. Saute till oil separates.
6. Add beef stack and boil it. Once gravy boiled add sliced beef then close the lid, cook for 5 mins.
7. Open the lid and cook thill the gravy thick. Pour thick coconut milk and stir well.
8. Spread curry leaves and coconut oil and mix well.
9. Serve with rice/ kappa puzhukku/ puttu/ chapathi/porotta.
