In this video, I am showing how to make Una-don (short for Unagi-don or Unagi-Donburi), but more specifically a variation of Una-don, HITSUMABUSHI, which is a specialty of Tokai region, where I come from. Unagi is an Eal that lives in Japan and almost always eaten over rice as Donburi.

In my Channel, I show step by step of alternative but authentic Japanese home cooking, which can be made with the ingredients that are easily available outside of Japan.

Ingredients for Una-don (Hitsumabushi style):
Pre-cooked Unagi                               1 Piece (200 g)
Tare (sauce)
- Sugar                                                               1 Tbsp
- Mirin                                                                2 Tbsp
- Sake                                                                2 Tbsp
- Soy sauce                                                      2 Tbsp
Dashi stock
- Water                                                              1 cup
- Kombu kelp                                                    2-3 g
- Katsuobushi (Bonito flakes)                       5-7 g
Condiments
- Scallion  
- Nori    
- Wasabi
