Today I'll be showing you a simple red velvet cake recipe.

Ingredients for dry mixture
All-purpose flour/maida - 170g
Cocoa powder - 2 tbsp
Baking powder - 1tsp
Baking soda - 1/2tsp
Salt - pinch
In a bowl, combine the dry mixtures and sieve it thoroughly.

Ingredients for wet mixture
Butter - 200g
Sugar - 170g
Eggs - 3/150g
Vanilla essence - 1 tsp
Liquid food color - Red - 1 tsp
Buttermilk - 2 tbsp
Start with creaming the butter and sugar till it turns white and creamy.  Beat eggs, add them one by one. Using vanilla extract or essence will add to the flavor.
Add buttermilk and red liquid food color and bind them.
Vinegar or yogurt can be used instead of buttermilk.

Now sprinkle dry mixture over the wet and start folding it as shown. Do this in parts.

Meanwhile, prepare a 10" dia 2 1/2"inch deep baking dish. Use butter-paper or grease it with some butter and flour. Gently pour the batter into the mold and spread it evenly.
Lightly tap the dish as shown to get rid of trapped air bubbles.
In a preheated oven, bake the cake at 180 degree C for 40 minutes.
Remove the cake from the oven and let it cool. Notice the sides shrink, indicating the cake is well baked.

Ingredients for cream cheese frosting.
Cream cheese - 100g
Sugar - 50g
Vanilla essence - 1/2 tsp
Whipped cream - 150g
Beat cream cheese and sugar till moist, add essence. Fold in the whipped cream, blending it right.      

Remove the cake from the mold as shown and place it on a working area/ plate.  Cut a thin layer of the crust with a bread knife,  save this for later use.  Now split the cake into two halves, get better results holding the bread knife straight and flat as possible.

Using a pallet knife spread the cream cheese evenly, align the top layer making a cake sandwich. Use a turntable and clean set of pallet knife to frost the cake.
Be a little creative, pipe icing over the cake, and use the leftover crumbs to give it a contrast.
Let it sit in the fridge for a bit, and enjoy the yummy red velvet cake.
