Cashew Macaroons Recipe

Ingredients:
Egg white at room temperature - 1 (25g)
Powdered sugar - 200g
Cardamom powder - 1/2 tsp
Baking powder - 1/2 tsp
Cashew nuts - 150g
Almond essence - 1/4 tsp
Fresh lime juice - 2 tsp


Method:
Add baking powder to the powdered sugar and sieve it,
discard the remains. In a bowl, carefully separate the egg white from the yoke. Beat the white till it turns foamy, now you can add the almond essence. Add the sugar mixture to the whipped white in parts. Continue beating at a low speed. Add cardamom powder and fresh lime juice. I like coarsely crushed cardamom, as the bits give intense flavor.
Continue to beat the mixture on a med-low speed till it turns stiff.

Fold in some roughly chopped cashews, maintain the consistency by adding powdered sugar if the batter is loose. Prepare the baking tray by greasing it with some oil. Use your hands and drop rough batter blobs on the tray. Make sure to place them apart, as the blobs rise and could stick together.

In a preheated oven, bake them at 150-160 deg C for about 12-15 minutes.
Macaroons are ready when they turn subtle yellow. Let it cool till room temperature and store them in an airtight container.
