Pavakka Kondattam, also known as Bitter Gourd Fryums, is a traditional Kerala delicacy that transforms the often-avoided bitter gourd into a delightful crispy snack. This dish showcases the ingenuity of Kerala cuisine, where even the most bitter vegetables are turned into mouth-watering treats. Bitter gourd is marinated with spices and sun-dried before frying. Spread the coated bitter gourd slices on a clean cloth or tray and sun-dry them for 3-4 days until they are completely dry. If sun-drying is not possible, you can use an oven to dry them at a low temperature

Ingredients
Sliced bitter gourd – 500 grams
Red chilli powder – 1 tbsp
Lemon juice – 2 tbsp
Turmeric powder – ½ tsp
Salt -  1 tbsp

Process

Take 500 grams of sliced bitter gourd in a mixing bowl
Add 1 tsp of salt and mix well
Boil water in an idli cooker and place the steamer plate
Now transfer the sliced bitter gourd into the steamer plate
Cook this for 3 minutes over high flame and turn off the flame
Take it out and allow it to cool
In a mixing bowl add 1 tbsp of red chilli powder, 3 tsp of salt, ½ tsp of turmeric powder and 2 tbsp of lemon juice
Mix well
Now add the cooked bitter gourd
Mix well and ensure that all the pieces are coated with the masala
Spread this in a plate and sun dry it for 3-4 days
We have sun dried this for 4 days and it is ready to fry
Heat oil in a pan over medium flame and deep fry it
When it turns light brown take it out
It is ready to serve
