Ingredients
Cubed ash gourd – ½ kg
Slit green chilli – 3
Julienned ginger – 1 inch piece
Shallots/small onion – 10
Curd – 2 cups
Red chilli powder – 1 tsp
Dry red chilli – 2
Turmeric powder – ½ tsp
Jeera / cumin seeds – ½ tsp
Grated coconut – 1½ cups
Mustard –1 tsp
Fenugreek – ½ tsp
Fenugreek powder – ¼ tsp
Asafoetida powder – ¼ tsp
Curry leaves – 3 sprigs
Salt – to taste
Coconut oil – 2 tsp
Water


Process

1. Take a thick bottomed pan and add ½ kg of cubed ash gourd, 3 slit green chillies, 1 sprig of curry leaves, 1 inch piece of ginger, ¼ tsp of turmeric powder, ½ tsp of Kashmiri red chill powder and a little salt
2.  Add 2 cups of water and mix well
3. Cover it with a lid and cook it over medium flame for 8-10 minutes. Stir occasionally
4. Meanwhile take a blender and add 1½ cups of grated coconut, ½ tsp of cumin seeds, ¼ tsp of turmeric powder and 5 small onions
5. Add a little water and grind this into a fine paste
6. Keep it aside
7. Now reduce the flame and add the ground paste, a little water, ¼ tsp of fenugreek powder and ¼ tsp of asafoetida powder
8. Mix well and cook it over low flame
9. When it starts boiling add 2 cups of whipped curd
10. Mix well and turn off the flame
11. Heat 2 tsp of coconut oil in a pan
12. Add 1 tsp of mustard
13. When it splutters add ½ tsp of fenugreek, 2 dry red chillies, 2 sprigs of curry leaves and 5 chopped small onions
14. Saute this till the onions turn light brown
15. Reduce the flame and add ½ tsp of Kashmiri red chilli powder
16. Mix well and turn off the flame
17. Now add this into the curry
18. Cover it with the lid and allow it to set for ½ hour
19. Ash gourd pulissery is ready to serve
