You can make this premix powder and use it as and when required. Idli rice and Urad dal is mixed in 4:1 ratio. It is washed, dried and powdered separately in a flour mill. Then it is mixed and stored in an air tight container. We will take you through how to prepare this.

Ingredients
Idli rice – 4 kg
Urad dal – 1 kg
Fenugreek - 50 grams


Process

1. Wash 4 kg of idli rice and dry it under the sun for 2 to 3 days
2. Wash 1 kg of urad dal and 50 grams of fenugreek. Dry it for 2 to 3 days
3. Ensure that these contains no moisture
4. Grind idli rice and urad dal separately into a fine powder, preferably in a flour mill
5. Allow it to cool down
6. Once it reaches room temperature, mix both the powders and store it in an airtight container
7. Take sufficient quantity of the powder and add a little salt
8. Add water little by little and mix well
9. Bring it into idli batter consistency
10. Mix it with your hand for 5 minutes and make sure that there are no lumps
11. Cover it with the lid and keep it for fermentation
12. Normally it will take 10 to 14 hours for fermentation
13. The time for fermentation would depend on the weather conditions
14. Now the batter is ready for idli and dosa
15. Grease the idli moulds with a little oil and pour the batter
16. When the water starts boiling in the idli cooker place the moulds and cook it for 10 minutes over medium flame
17. Take it out
18. Now soft and fluffy idlis are ready
19. To make dosa a little more water into the batter and bring it into dosa batter consistency
20. Heat a dosa tawa over medium flame and grease it with oil
21. Pour 1 ladle of batter and spread it evenly
22. Sprinkle a little oil
23. Flip it over
24. Now it is ready, take it out
