Vietnamese Lotus Root Salad Recipe (Pork & Shrimp) |  Gỏi Ngó Sen

This is a simple dish to make for any special occasion! I love the crunchy texture and the wonderful flavor you get from all my favorite herbs and homemade Vietnamese fish sauce. Be sure to check out my easy fish sauce video (link provided below in the ingredients).

**Ingredients:**

½ cup mint leaves
½ cup Vietnamese coriander
½ cup cilantro
½ cup carrot
1 cup cucumber
24 oz jar of lotus root in brine
½ cup water
½ cup white vinegar
½ cup sugar
8 oz pork
8 oz shrimp
1 tbsp crushed peanut for garnish

Served with rice crackers or with a side rice 🙂

**Cooking Instruction:**

Making the pickled Carrot & Lotus Roots***

Step 1:
Add ½ cup water, ½ cup white vinegar, ½ cup sugar, ½ cup carrots and 24 oz of lotus root into a mixing bowl.

Step 2:
Combine all ingredients and refrigerate for 2 hours

Step 3:
Drain the water mixture after 2 hours

**Making the Lotus Root salad:**

Step 1:
Boil the 8 oz pork on medium heat until the internal temperature is 165°F (~20-25 minutes). Next, thinly slice the pork.

Boil 8 oz shrimp on high heat until it’s fully cooked. 2-3 minutes (I’m using shrimp size 21-25). Once cooked, devein, peel and slice shrimp in half.

Step 2:
Combine all the prepared herbs, vegetables, and protein into a mixing bowl.

Step 3:
Add 1 tbsp of crush peanuts
Add 3 tbsp Vietnamese fish sauce (Nước Chấm/dipping sauce)
