• 1 green papaya (500-700 grams or 1.5 pounds), peeled, seeded, and julienned
• 2 large carrots, julienned
• 1 pound shrimp, peeled and deveined
• 5 tablespoons fish sauce
• 5 tablespoons sugar
• 4 1/2 tablespoons fresh lime juice
• 2 tablespoons water
• 3 small Thai red chilies, seeded and minced
• 1 red sweet pepper, julienned
• 1/2 cup roasted peanuts, chopped
• 1/4 cup fresh cilantro leaves, chopped
• 1/4 cup fresh Vietnamese Coriander (rau ram), chopped
• 2 tablespoons fried shallots (for garnish)

Instructions:
1. Peel and seed the green papaya, and julienne it into thin strips. Place the papaya in a large bowl of ice water and set aside.
2. Peel the carrots and julienne them into thin strips. Place the carrots in a separate bowl of ice water and set aside.
3. In a pan, combine the fresh lime juice, fish sauce, sugar and water. Heat over medium heat, stirring until the sugar is dissolved.
4. Add the minced Thai red chili to the pan and stir to combine.
5. Drain the shrimp from the lime juice and add them to the pan with the dressing. Cook for 2-3 minutes or until the shrimp turns pink.
6. Add the sliced red pepper to the pan.
7. Toss all the ingredients together in the pan until the shrimp is cooked and the vegetables are coated with the dressing.
8. Drain the julienned papaya and carrots from their ice water baths and add them to the pan with the other ingredients.
9. Toss everything together until the dressing coats everything evenly.
10. Just before serving, sprinkle the chopped peanuts, chopped mint, chopped cilantro, and chopped basil over the top of the salad.
11. Garnish with the fried shallots.
