RECIPE
Ingredients:
Beef, the better the cut the more tender the meat

In this video I used:

1 Kilo of Beef
1 Onion
3 – 4 Bay Leaves
Rapeseed Oil (most oils will do)
4 Garlic Cloves

Dry Rub:

½ tsp Rosemary
½ tsp Thyme
Bay Leaves
Garlic
½ tsp Celery Salt
1 tsp Onion Powder
½ tsp Paprika
1 tsp garlic Powder
1 Beef Stock Cube

Glaze:

1 tsp Worcestershire Sauce
2 tsp Wholegrain Mustard
3 tsp Honey
2 tsp Brown Sugar
2 tsp Soy Sauce

Roast Potatoes:

1 Beef Stock Cube
1 tsp Soy Sauce
1 tsp of White and Black Pepper
½ Salt
½ Rosemary

Method:
1. Combine the glaze ingredients and mix well and put aside
2. Combine the dry rub ingredients and put aside
3. Let the beef come to room temp
4. Oil some tinfoil and season
5. Lay out some onions, bay leaves and garlic slices
6. Rub the beef with the dry rub
7. Make incisions in the meat and insert garlic
8. Add more onions and spray with oil
9. Wrap and cook for 30 mins at 170°c/ 338°F
10. Turning at 15 mins
11. After 30 min remove and coat with the glaze, Re wrap and cook for a further 15 mins
12. Then remove the tinfoil and cook for 25 mins more to brown the meat at  200°c/ 392°F
13. As a guide its 20 mins per 500g +20 for rare, +25 for medium rare 30 for medium
14. Leave to stand for 15-20 mins before carving
