Hi everyone!
Today, I applied the delicious basic butter cookie recipe that I posted last year,
I made 6 flavors of cookies at once.

When you want to change from the basic cookies to specific flavored ones,
Usually, it is made by replacing around 10% of the flour with powdered ingredients like cocoa or matcha powder...etc.

In fact, each flavor has a different characteristic or taste intensity.
So the optimal powder ingredient ratio is best confirmed by testing.

to find the most delicious ratio
As I tested each flavor, I changed the amount of powdered ingredients and flour little by little.

▶Ingredients (Approximately 20 to 25 cookies per flavor - may vary depending on cookie cutter size!)

[Earl gray cookies]
50g Unsalted butter
32g Granulated sugar
15g Eggs
1.5g Baking powder
1g Vanilla extract
Salt A pinch of salt
90g All-purpose flour
2g Earl gray tea leaves

[Cheese cookies]
50g Unsalted butter
32g Granulated sugar
15g Eggs
1.5g Baking powder
1g Vanilla extract
Salt A pinch of salt
70g All-purpose flour
30g Cheese powder
8g Parmesan cheese powder

[Pumpkin cookies]
50g Unsalted butter
32g Granulated sugar
15g Eggs
1.5g Baking powder
1g Vanilla extract
Salt A pinch of salt
73g All-purpose flour
20g Pumpkin powder(Kabocha powder)

[Chocolate cookies]
50g Unsalted butter
32g Granulated sugar
15g Eggs
1.5g Baking powder
1g Vanilla extract
Salt A pinch of salt
75g All-purpose flour
12g Cocoa powder

[Matcha cookies]
50g Unsalted butter
32g Granulated sugar
15g Eggs
1.5g Baking powder
1g Vanilla extract
Salt A pinch of salt
80g All-purpose flour
6g Matcha powder

[Mugwort cookies]
50g Unsalted butter
32g Granulated sugar
15g Eggs
1.5g Baking powder
1g Vanilla extract
Salt A pinch of salt
78g All-purpose
7g Mugwort powder

1) Lightly beat butter at room temperature.
2) Add sugar and salt and mix lightly with a hand mixer until the color is slightly lighter.
3) Add room temperature eggs and vanilla extract and mix lightly until well mixed.
4) Sift flour and other powdered ingredients and mix them into one lump.
5) Place the dough between two sheets of parchment paper, or Teflon sheets and roll it out to a thickness of 3mm.
6) Rest in the refrigerator or freezer until firm.
 * If you have time, it is ideal to rest for at least 2 hours in the refrigerator rather than the freezer.
7) Cut the dough with a cookie cutter into the desired shape.
8) Bake in a preheated oven at 160 degrees Celcius for 10 to 12 minutes. (I used Wizwell Enhance Oven)
   * Unox/Smeg/Gierra, etc. Convection Oven: Bake at160 degrees Celcius for 10 minutes

*Storage: Can be stored for about 5 days when stored in an airtight container with a desiccant at room temperature. It can be stored for about 1 month when stored in the freezer. The cookie dough can be stored in the freezer for 2-3 months.
