Ingredients (18 servings)
✔Pate sucre
125g unsalted butter
45g eggs
82g powdered sugar
2g salt
215g cake flour
36g almond flour
18g corn starch
3g Vanilla bean paste
✔Ganache peeling
(A total of 18 sand cookies, 9 each)
33g dark chocolate
33g milk chocolate
65g heavy cream
65g Strawberry Couverture (Chocolate)
65g heavy cream
▶The video was for 14 pieces of ganache, but for convenience, I will write down the recipe for 18 piece of cookies.
▶Bake in a preheated oven at 311℉ for 18 min (based on convection, induction oven often go 10-20 degrees higher). Baking time may vary depending on cookie thickness. Be sure to check the baked color.
▶Store frozen and enclose silica gel (food desiccant) to maintain crispness.
