* I used T55 flour for the salt bread recipe. If you don't have it, you can substitute it with bread flour.

* Ingredients for 9 pieces (Divide by 80g)
200g | Bread flour
40g | Cake flour
80g | T55 (French wheat flour)
200g | Poolish
14g | Sugar
4g | Salt
5g | Dry yeast
14g | Skim milk
210g | Water
16g | Butter

* Poolish Ingredients (pre-work)
100g | Bread flour
1g | Dry yeast
100g | Water

* Butter for filling
13g | Butter x 9ea
