Jalebi, also known as Jilapi, zulbia, mushabak and zalabia, is a sweet snack popular all over South and Western Asia.
My recipe is something between Persian and Indian recipes. The Persian jalebi ( or Zolobia ) is crispier than Indian because the main ingredient is starch ( not flour ) and scientifically using more starch results in more crispiness, at the other hand it has more calorie, so I have adjusted the amount of starch to the level that the jalebi has lower calorie but it's still crispy. I've used saffron and rose water Which are both Persian.If you don't have saffron you can use food coloring or simply omit it.

Ingredients for Jalebi batter:


1 cup ( 140g ) all-purpose flour
1/4 cup ( 30g ) corn starch
1/4 cup (70g ) Greek yogurt
2 tablespoons Saffron water
1/2 teaspoon vanilla powder
1 teaspoon baking powder
1/2 cup ( 120ml ) water


Ingredients for sugar syrup:
1 ½ cup ( 300g )sugar
1 cup ( 240ml ) water
5 cardamom
1 tablespoon rose water
1 tablespoon saffron water
1/2 lemon, juiced
