After trying many whole orange cake recipes with fresh oranges, I found this vegan orange cake recipe the most delicious one. This eggless orange cake is soft and moist and it stays fresh and moist for up to four days! If you're looking for a delicious tea time cake try this orange cake and enjoy this homemade cake with your family and friends.
I love this easy orange cake for its citrus flavour. I’ve also used walnuts which makes it more healthy and nutritious.
Wondering why we cook the whole orange?! Since we use the whole orange, by cooking we remove the bitterness from the pith (white part under the skin). Also cooking makes the orange soft which makes it easy to blend with other ingredients.

What you will need : 23 cm (9 inch) springform pan lined with parchment paper
Ingredients for the cake:
1 orange (~300 g)
1 cup fresh orange juice (2 or 3 oranges needed)
2 cups (250 g) all-purpose flour
1 cup (200 g) granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup (60 ml) vegetable oil
2/3 cup (75 g) walnut, chopped
Ingredients for the glazing (glazing is optional):
1 cup (240 m) fresh orange juice (2 or 3 oranges needed)
1 tablespoon of corn starch
1/4 cup (50 g) granulated sugar
Bake in a preheated oven at 180° C for 40 – 45 minutes
