Spicy Beef & Beansprouts Stir Fry Chinese Style

Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

Ingredients:
200g Beef Rump Steak (cut into thin strips)
200g Beansprouts
4 Spring Onions (cut into 4cm in length)
4 Cloves Garlic (finely chopped)
5g Ginger (finely chopped)
2 Red Chillies (roughly chopped)
1 Tbsp Cooking Wine
1 Tbsp Dark Soy Sauce
½ Tbsp Vinegar
1 Tsp Ground Sichuan Pepper
Salt to Taste

Method:
1. Place beef in a bowl, add the cooking wine and soy sauce, mix well then leave to marinate for an hour
2. Heat 1 Tbsp of oil in the wok over high heat
3. Add the beef and stir-fry for 5 minutes, remove from wok
4. Heat another Tbsp of oil in the wok over high heat
5. Add the chillies, ginger and garlic, stir-fry for a few seconds
6. Add the beef, beansprouts, spring onions, ground Sichuan pepper, vinegar and pinch of salt, stir fry for 2 minutes
7. Transfer into a dish and serve with rice or noodles
