Sichuan Spicy Pork (Gong Bao
Sichuan Spicy Pork (Gong Bao Pork) Stir Fry Chinese Style
Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
250g Pork Fillet
70g Peanuts
7 Dried Red Chillies
200g Cucumber
20g Ginger
6 Cloves Garlic
2 Spring Onions
20ml Chilli Oil
10ml Cooking Wine
3g Chicken Granules
1 Tbsp Cornflour
50ml Water Mixture
Salt to Taste
Method:
1. Slice the ginger
2. Chop the garlic & spring onions
3. Chop the chillies roughly
4. Cut the cucumber into 1 cm cubes
5. Cut the pork into 1 cm cubes
6. Place the pork in a mixing bowl
7. Add the salt, chicken granules, 1 Tbsp of oil & half the cornflour mixture
8. Mix well & leave to marinate
9. Place the pork into half a litre of hot oil
10. Fry for 2 minutes then remove & drain
11. In 1 Tbsp of hot oil, add the ginger, garlic & spring onions
12. Fry for a few seconds
13. Add the chillies & stir
14. Add the cucumber & stir
15. Add the pork & stir-fry for 2 minutes
16. Pour in the chilli oil, add salt & cooking wine
17. Add the remaining cornflour mixed with the water & stir
18. Add the peanuts & stir-fry for 1 minute
19. Transfer to a dish & serve
