Spicy Pork & Carrot Stir Fry Chinese Style

Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

Ingredients:
200g Pork Fillet
150g Carrot
10g Ginger
5 Red Chillies
3 Cloves Garlic
2 Spring Onions
1½ Tbsp Light  Soy Sauce
2 Tsp Dark Soy Sauce
3 Tsp Peanut Oil
1 Tsp Cornflour
2 Tsp Cooking Wine
2 Tsp Vinegar
30g Roasted Peanuts
½ Tsp Chicken Powder
Salt to Taste

Method:
1. Cut carrots  and chillies into thin threads
2. Finely chop the garlic, ginger and cut spring onion into 1 inch in length
3. Cut pork into thin threads and place in a mixing bowl
4. Add 1 Tbsp of water, cooking wine, cornflour, soy sauce and 3 Tsp peanut oil. Mix well and leave to marinate for 5 minutes
5. Heat ½ litre of cooking oil in the wok
6. Place pork into the hot oil and stir to separate, fry for 1½  minutes, then remove from oil and drain. Leave about 1 Tbsp oil in the wok and discard the rest
7. Add chillies, ginger and garlic into the wok and stir-fry for few seconds
8. Add carrots and stir-fry for a minute
9. Add the pork and stir-fry for 2 minutes
10. Add peanuts, chicken powder and vinegar. Stir-fry for a minute
11. Add salt, spring onions and stir
12. Transfer to a dish and serve
