Braised Garlic Prawns Chinese Style

Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

Ingredients:
500g Whole Raw Prawns
2 Tbsp Olive Oil
4-6 Cloves Garlic
10g Ginger
5g Chives
20g Tomato Puree
20g Sugar
½Tsp Cornflour
40ml Water Mixture
Salt To Taste

Method:
1. Finely chop the ginger, garlic and chives
2. Trim the prawns, cut prawns at the back and remove intestines
3. Boil 100ml water in a saucepan
4. Add a pinch of salt, place prawns into the pan, boil for a minute till turned pink, remove from pan but reserve the liquid
5. Heat a wok over medium heat
6. Place olive oil, ginger and garlic, fry for a few seconds
7. Add the tomato puree, stir-fry for 20 seconds
8. Add the liquid used for cooking the prawns with, add salt and sugar, bring to the boil
9. Add prawns, turn heat to low and cook for 2 to 3 minutes
10. Remove prawns onto a dish, pour and cornflour & water mixture into the wok, stir until the juice is thicken
11. Pour the sauce over the prawns, garnish with chives and enjoy
