My recent culinary school assignment to make a Quiche Lorraine gave me a fusion idea that turned out to be delicious!  So, I combined 2 popular dishes from Persian (Iranian) and French culinary traditions! The Kookoo Sabzi (sauteed patties of fresh herbs and walnuts, mixed with eggs) meets and mingles with the French Quiche (an egg custard usually mixed with herbs, meat and other tidbits, baked in a flaky pie crust)! The introduction of a particular combination of fresh leafy herbs (leeks/scallions, cilantro, parsley, dill, lettuce) and crushed walnuts to the French Quiche is reciprocated by introducing the Persian Kookoo to heavy cream, a combination of cheeses for extra savory deliciousness and a flaky buttery pie crust!  Yum … This is a super delicious original creation from Cafe Bagheri!  
NOTE: Persian Kookoo is made with different ingredients. This is a fusion of herb kookoo (kookoo sabzi) with French quiche!
