Learn how to make the popular Persian (Iranian) Tahchin rice cake in an oven. This is an alternative to the traditional method of making tahchin at the bottom of a pot. This way you can utilize your oven while using the stovetop for stews and other things you have to prepare before the guests arrive. This method will also make a larger amount of tahchin.
In this video I am not putting any meat in the tahchin mold, so it's a great vegetarian item and will make a great side dish for any kabob or khoresh (stew). Look at the recipe in comments section below and note in the variations sections that you can add various nuts and dried fruits in addition to barberries and raisins. If you can't find barberries where you are, craisins (cranberry raisins) are a perfect substitute.

1:56 Boil rice
3:13 Cook and "candy" the barberries and raisins
5:06 Drain boiled rice and wash the starch from it
7:02 Add aromatics to candied barberries and raisins
9:02 Make the Tahchin rice batter
11:58 Grease and prepare the Pyrex dish for baking Tahchin
14:00 Put batter in the greased Pyrex dish
15:17 Scatter candied berry and raisin mixture over first layer of batter
