"Kuku Sabzi" or Iranian Herb Frittata by Paris Hobbs for Farhang Flavor

#FarhangFlavor: Episode 33: PARIS HOBBS - "KUKU SABZI" HERB FRITTATA
We kick-off our first episode of #FarhangFlavor in 2021 with a versatile recipe for one of Iran's most beloved dishes, the "Kuku Sabzi" or Persian herb frittata. Join us as we visit the kitchen of Paris Hobbs to learn about her creative oven baked style "Kuku."
According to Paris, "Kuku Sabzi is a dish I grew up on, and one of the first dishes that I learned to make with my mother. For many years, cooking has been my passion. I feel that my blog is an excellent way to share my rich Iranian culture with other individuals who may not be familiar with Iran. I have great respect for what Farhang Foundation is achieving regarding the promotion of Iranian culture, and I’m glad to be able to contribute to this mission in my own small way."

Ingredients:
1 cup chopped parsley
1 cup chopped dill
1 cup chopped cilantro
1 cup chopped spinach
1 cup chopped chives (green onions is also a good substitute for chives)
4 eggs
1/2 cup walnuts, crushed
1/4 cup barberries
1 teaspoon baking powder
1 tablespoon garlic, finely chopped
2 tablespoons extra virgin olive oil
Salt and pepper to taste
Directions:
Preheat the oven to 350°F.
In a large mixing bowl, whisk the eggs, garlic, oil, baking powder, salt and pepper together until well combined.
Add the herbs, walnuts, and barberries. Stir to combine.
Pour the mixture into a greased baking pan. Spread into an even layer, flattening with a spatula. Bake for 30 minutes or until you see the eggs at the edges of the pan beginning to set.
Let it cool down in the pan for 5 minutes, then slice into wedges and serve.
