This yummy candy is made with ginger, jaggery and cardamom.  Fresh ginger is cut into pieces and blended with cardamom. The ginger paste is then cooked with jaggery till it reaches the right consistency.  Try this out.

Ingredients  
Ginger – 250 grams
Cardamom pods – 4
Jaggery – 400 grams
Ghee – 2 tsp
Water – ¼ cup


Process

1. Peel and wash 250 grams of ginger
2. Now cut the ginger into small pieces
3. Transfer it into a blender
4. Add 4 cardamom pods
5. Blend this without adding water. Then add a little water and grind this into a fine paste
6. Keep it aside
7. Heat a thick bottomed pan over medium flame and add 400 grams of jaggery
8. Add ¼ cup of water
9. Cook this till the jaggery melts
10. Stir occasionally
11. Now turn off the flame and strain the jaggery syrup
12. Heat a thick bottomed pan over medium flame
13. Add 2 tsp of ghee
14. Add the ginger paste
15. Add the jaggery syrup
16. Mix well and continue cooking over medium flame
17. Stir occasionally
18. When it thickens turn off the flame
19. Grease a tray with a little ghee
20. Transfer this into the tray and allow it to cool
21. Now make small balls
22. Ginger candy is ready. Keep this in an air tight container
23. You can store this for a month
