We are back in the kitchen with Food Editor Silvana Franco and her son Fabio as they cook a vibrant, veggie-packed vegan soup.

This recipe is made with parsnips and carrots, which are roasted beforehand with maple syrup for added sweetness, and flavoured with cumin. It makes a great working from home lunch, or can be made ahead and frozen in individual portions. Finish off with a swirl of yogurt (dairy-free if you’re vegan) and the kale crisps just before serving.

Ingredients:
500g essential Waitrose Parsnips
300g carrots
1 tbsp maple syrup
3 tbsp olive oil
150g pack Pentland Brig kale, stalks and leaves separated
2 onions, roughly chopped
2 garlic cloves, crushed
2 tsp ground cumin
500ml fresh vegetable stock
1-2 tbsp lemon juice
4 tbsp non-dairy yogurt alternative
