We’re back in the kitchen
We’re back in the kitchen of Partner and Food Editor Silvana Franco who is preparing for a family picnic down by the river. Sandwiches are always an essential element of Silvana’s family picnics but with husband Rob being dairy free and children Fabio and Cassia always wanting different fillings, it can often mean having to make a variety of sandwiches. So Silvana’s created this giant picnic loaf - one massive loaf of bread with all of their fillings in one.
In terms of fillings, anything goes here - Silvana’s stuffed their giant sandwich with falafels, peppers and vegan cheese for husband Rob; roast chicken, streaky bacon and stuffing for herself; boiled egg with avocado and bacon in daughter Cassia; and sauerkraut, pastrami and Swiss cheese for son Fabio. Deli meats, leftover cooked sausages, prawns, smoked salmon or cheese would all work brilliantly – just add in whatever takes your fancy or is in the fridge, and add some imagination with flavours. For extra flavour, spread the bread with a little pesto, houmous or pea purée first too.
Over the weeks, we’ll continue to bring you recipes, ideas and tips to help you make the most of what’s in your cupboards to cook simple, nourishing meals to feed the family, stock up the freezer, or give someone a little treat.
