Today we are sharing another vegan dessert with you. It’s a variation of the traditional Bulgarian Chocolate Cake “Garash”. It’s commonly found in Bulgarian patisseries and restaurants. Back in the distant 1885 a young Austro-Hungarian confectioner named Kosta Garash formulated a recipe for a layered cake with rich chocolaty flavour complimented by nuts and a creamy ganache, naming it after himself. One Sponge Layer:
250 ml. boiled chickpea water – aquafaba
60 gr. icing sugar
50 gr. caster sugar
70 gr plain flour
1 tsp. baking powder
50 gr. grind pecans
Double Ingredients for two layers!

Chocolate Ganache:
250 gr. dark chocolate (60% or 70% cocoa)
1 can coconut whipping cream (300 gr.)
2 tbsp agave nectar

Chocolate Topping:
80 gr. black chocolate
60 ml. coconut cream
