INGREDIENTS AND METHODS
Coconut Cookies
Softened Butter (1/2 cup or 120 g)
I have used homemade unsalted butter

Powdered Sugar (3/4 cup or 85 g)
Cream together until light and fluffy
Vanilla essence (1 tsp or 5 ml )
Sift in...
Plain Flour (1 cup or 120 g)
Desiccated Coconut (1 cup or 90 g)
Baking powder (1/2 tsp or 3 g )
Salt (1/4 tsp or 1.5 g )
Combine well
Milk (2-3 tbsp or as required)
Knead a soft dough
Take a tbsp of dough
Shape the cookies
Coat (one side) with desiccated coconut
Place them on a lined baking tray
Shape all the cookies in the same way
Makes 18-20 cookies
Bake in a preheated oven at 150C/300F/Gas mark 2 for 18-20 minutes
Here they are
all nicely baked!
Allow cookies to cool down slightly before moving to the wire rack
Put them on a wire rack to cool down completely
Deliciously Buttery, Crispy & Crumbly
Coconut Cookies
are ready to serve!
Can be stored in an airtight container for up to 2 weeks
