2-3 pieces......................chicken thigh
1.5 cup..........................dried shiitake mushroom
10-12 slices.................ginger
1...................................green onion / small amount of cilantro

Chicken Marinate:
1 tsp ...........salt
1/2 tsp....... sugar
1 tsp ...........soy sauce
1 tsp...........shaoxing wine
1 tsp............grated ginger
1/2 tbsp.....cornstarch

Blanch Chicken With:
water to cover chicken
3-4 slices of ginger
1 tsp Shaoxing wine
