Mutton sukka
Ingredients-
Sheep mutton- 1.600 gms
For marination-
1 sp turmeric
Salt
Green masala(2 cup coriander,2 inch ginger,40 garlic cloves,8 green chillis)(grind into paste)
300 gms curd
Mix all and rest overnight or minimum 2 hours
For dry garam masala-whole spices- 3 bay leaves
1 sp cumin,black cumin and poppyseeds
3 tbsp coriander seeds
4 trifala
2 black cardamom,
2 star anise
Cinnamon stick
Javeri
1 sp pepper corn
1 sp cloves
for black masala- 2 dry coconut vati and 3 onions( roasted)
Oil
Whole spices for tempering- 2 bay leaves,small cinnamon stick and 3 green cardamom
4 onions slice cut
7 garlic cloves and small piece of ginger
3 sp red chilli powder (simply swadisht agri masala)
3 tomatoes chopped
2 sp ghee
Coriander chopped
Coal for smoky effect
