Dundee Cake is a traditional Scottish fruit cake that originated in the 19th century in Dundee, a city on the east coast of Scotland. The cake is distinguished by its rich mixture of currants, sultanas, almonds, and a distinctive topping of blanched almonds. One popular theory about its origin is that the cake was first made by the company Keiller's, which is known for producing orange marmalade in Dundee. They are said to have been the first to commercialize this type of fruit cake, adding their twist and bitter orange peel from their marmalade production.

Dundee Cake was created as a lighter alternative to the heavier, more traditional Christmas cakes popular then. Its characteristic almond topping is believed to have been a decorative representation of the cakes' connection to Dundee. Over the years, Dundee Cake has become a beloved treat across Scotland and beyond, often served during afternoon tea and on festive occasions.

Taking Cooking food back to basics.

Ingredients:

- 1 cup (225g) unsalted butter, softened
- 1 cup (225g) light brown sugar - for a dark cake Brown sugar
- 4 large eggs
- 2 cups (225g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons mixed spice
- Zest of 1 orange
- 3 tbsp marmalade
- 1/4 cup (60ml) whisky (optional, can substitute with orange juice or milk)
- 2 cups (300g) sultanas (golden raisins)
- 1 cup (150g) currants
- 1/2 cup (75g) glacé cherries, halved
- 1/2 cup (50g) mixed peel
- 1 cup (100g) ground almonds
- 1/4 cup (50g) blanched almonds for decoration
- Marmalade glaze

NOTE: I opted for a low temp and increase - Most recipes call for a higher temp and decrease. Using an air fryer is more of a compact unit - I decided on caution - and it worked. I've never seen a Dundee Cake cooked in an air fryer.

oven to 360°F (150°C) 90 mins
Air fryer 280°F (140°C)  80 mins – 20 mins covered with foil
Air fryer 320°F (160°C)  20 mins
