Pan Seared Mahi with lemon caper sauce - an amazing quick dinner that's ready in under 30 minutes!

Ingredients:
1. 4 to 6 pieces mahi-mahi fillets
2. 1/2 cup chicken stock
3. Juice of half a lemon
4.1 tsp. salt
5. 3 minced garlic cloves
6. 1/2 tsp. cornstarch
7. 2 tbsp. butter, divided
8. 2 tbsp. capers
9. Few springs of parsley for garnish
10. Few springs of dill for garnish
11. 1 lemon thinly sliced
12. 1/4 tsp. black pepper
13. 2 tbsp. olive oil

Directions:
1. Mix salt and pepper and sprinkle fish fillets with mixture on both sides.
2. Using a large pan heat olive oil and 1 tbsp. butter over medium high heat.
3. Once butter is melted time for 30 seconds for butter to develop a golden brown color.
4. Add fish fillets. Cover and let sear for 5 minutes.
5. Turn fish over - carefully so it doesn't break, cover pan and let fish sear for  five minutes on the other side.
6. Remove fish from pan and set aside. Lower heat.
7. Add butter, chicken stock, lemon juice, minced garlic and capers to pan and mix.
8. Add cornstarch immediately and mix.
9. Add half of lemon slices.
10. Increase heat to medium high, return fish fillets to pan and let simmer for 2 minutes with the sauce.
11. Plate and garnish with chopped dill and  parsley, and remaining lemon slices.
