Macau Pork Chop Buns

This iconic pork chop sandwich is simple in terms of presentation. They have no trimmings or garnishes. The star of this dish is the fried pork chop.  In the authentic recipe, the pork chops are bone-in, meaning with bones, which I feel is difficult to eat in a sandwich. The bones actually add flavor to the pork chop but I still decided to go with boneless pork chop. Brining is to make the pork chop moist and juicy. Take note not to over cook the pork chops to avoid eating a dry pork chop. For the bread, the authentic recipe uses a Portuguese baguette. You can use French bread or baguette instead.  Mayo, catsup, chili sauce are served on the side and never inside the sandwich.
